Mathiueu Gaignon has over ten years of experience as head sommelier at some of the world’s most famous restaurants, including Joël Robuchon au Dôme in Macau and Gordon Ramsay’s Hospital Road in London, both 3-Star-Michelin. After completing the Mention Complémentaire Sommellerie in France in 1999, he became assistant head sommelier at Hospital Road, and has since worked with 2-Star-Michelin chefs Eric Chavot and Marcus Wareing at the Capital Hotel and the Berkeley, respectively. In addition, he opened two restaurants for the Connaught Hotel, one for Angela Hartnett and one with Hélène Darroze, helping these great chefs create and maintain an extensive wine list as well as overlooking service standards to bring the restaurants to a Michelin Star stratospheres.
Mr. Gaignon worked in a 3-Michelin-Star “Joël Robuchon Restaurant au Dôme - Grand Lisboa Hotel” after he moved to Macau, then he shifted to City of Dream, assumed the position of Wine Director.
And now The Seasons is very proud to have Mr. Gaignon as our Beverage Director. Importantly, he will also conduct Wine Tasting Class with different interesting topics at the end of each month .
Mathieu Gaignon作為一名首席侍酒師已有數十年的從業經驗,他也曾在世界幾家有名的餐廳擔任餐廳經理,其中包括:位於澳門的“Joël Robuchon au Dôme”米芝蓮三星餐廳和位於倫敦一家由Gordon Ramsay所經營的米芝蓮三星餐廳“Hospital Road”。1999年,他在法國完成了專業侍酒師文憑課程後(Mention Complémentaire de Sommellerie) ,便被提拔為“Hospital Road”的助理首席侍酒師,在當地他得到了世界著名侍酒師大師Ronan Sayburn的輔導。
Gaignon先生曾和米芝蓮二星廚師Eric Chavot 和Marcus Wareing在倫敦首都酒店和倫敦伯克利酒店合作。並且成功的為梅寶尼康諾酒店開設了兩家餐廳,分别由Angela Hartnett和Hélène Darroze經營,不僅幫助了他們創建豐富的酒單,還保證了服務質量,並使他們在開店後達到米芝蓮一星的水平。
Gaignon先生在來到澳門以後,在新葡京酒店裡的米芝蓮三星餐廳“Joël Robuchon Restaurant au Dôme工作,之後他轉到了澳門新濠天地工作,擔任葡萄酒總監。
現在季節非常榮幸地能夠邀請Gaignon先生成為我們的一員,除了擔當季節的飲品總監外,他還將在每個月的月底開辦不同主題的品酒班。
